Pork Chops and Potatoes Dutch Oven Recipe

This recipe gets ****

Ingredients:
6 pork chops
6 potatoes sliced thin
1 onion sliced
2 cans of cream of mushroom soup
Cooking oil

Instructions:
Pour a thin layer of oil in dutch oven and heat
Brown pork chops well in oil
Drain off excess oil
Lay pork chops in a layer on bottom of dutch oven
layer sliced potatoes on top
pour cream soup over top
Simmer with all coals under dutch oven until potatoes are tender
Check after 20 minutes, then every 10

You can sprinkle grated cheese on top too.  You can use cream of potato, cream of corn, or other cream soup if preferred.





Dutch Oven Mexican Casserole

This recipe gets: *****

1 lb. hamburger
1/4C chopped onion
1-24 oz. can V-8 juice
1 can corn
1 pkg. taco seasoning mix
1 small can sliced black olives
3/4C uncooked rice
1-15 oz. can red kidney beans

Brown hamburger in dutch oven and drain grease.  Add all ingredients and simmer 2 hours.  (try about six briquettes under the dutch oven and 4 on top.)  Add taco chips and cheese when served.





Bacon-Ranch Potato Salad

This recipe gets: *****

 1 1/2lb. small red potatoes (about 10) quartered
1/2tsp salt
1C grape tomatoes, cut in 1/2
... 1/2C chopped celery
1/4C chopped fresh chives or green onions
1/4C cooked crumbled bacon or 6 slices packaged precooked bacon from 2.2 oz package) chopped
1/2C ranch dressing

1. In Dutch oven or 5 quart saucepan, place potatoes and salt. Add water just to cover. Heat to boiling; reduce heat to low. Cover, simmer 10-15 min. or until tender. Drain, rinse with cold water to cool. Drain well, cool slightly.
2. Place potatoes in large bowl. Add tomatoes, celery, chives, and bacon.
3. Stir in ranch dressing. Serve warm or cover and refrigerate until ready to serve.



Upside-Down Pizza

2lbs. ground beef
1 med. onion-chopped
16oz. can tomato sauce
1C sour cream
1pkg. dry spaghetti sauce mix
11/2C grated mozzarella cheese
8oz. can crescent rolls
Parmesan cheese
4TBS melted butter

Brown ground beef with onion, and drain grease.  Add spaghetti sauce mix and tomato sauce, and let simmer about 5 min. to combine flavors.  Spread mixture into a 14-inch Dutch oven or large casserole dish.  Layer mozzarella and sour cream, and top with unbaked, unrolled crescent roll dough.  Brush crescent roll dough with melted butter and sprinkle Parmesan cheese on top.  Cook over coals or in a conventional oven at 375 degrees for 25 min.


Heart Hominy

1lb. of bacon, diced
1-32oz. container of sour cream
1lrg. onion, chopped
2TBS minced garlic
2-4oz. cans green chilis or jalapenos (depending on how spicy you want it)
1-32oz. bag grated cheddar cheese (or a mix)
2-6lb. cans white hominy, drained

Fry bacon in a 12" Dutch oven until crispy.  Remove bacon, and cook the onion and garlic in the bacon grease.  Once the onion is dender, add the hominy, cooked bacon and green chilis or jalapenos.  Simmer until hot and the hominy is cooked down a little.  Remove from fire for about 10 min.  with the lid on the Dutch oven, and then stir in sour cream and cheese.  Serves a branding crew of about 20-25.
